Worked my last 13 hour shift (of 4 in a row) last night, and I'm feeling GREAT because now I have a couple of days off with pretty much no committments! 

 

Breakfast before worK: 1 cup cold brew iced coffee mixed with 1 cup almond milk. Then I diced 1 medium onion, sautéed it, tossed 2 eggs in the pan to scramble with the onion. 1/4 cup of salsa dumped on top, and voila! Delicious, easy, and filling. 

Snack1: 1 Lodi apple 

Lunch: 2 cups stir fry vegetables with 1 serving lentils

Snack2: Pistachios (1/2 salt variety. Let's be real, I'm 26 years old, and I'm not too concerned with my sodium intake)

Dinner: Salad! 2 cups greens, cucumber, beets, homeade alfalfa sprouts

Snack 3: Iced soy latte, unsweetened, and a rice krispy treat! (nursing. tough shift. trying to work on ways to eat my feelings without totally derailing my diet. Open to suggestions on this one)

Water intake: Only 32oz, so going to try to get at least another 32 down before bed. 

What I'm planning to eat in an hour or so after I walk the dog and get ravenous: zucchini noodles, sautéed onion, 1/8 cup spaghetti sauce. Probably some nutritional yeast on top to pretend there's cheese in there. 

You may notice that my on-shift meal/snacks are pretty identical day to day. Reasoning: the only way for me to stay on track is INTENSE meal prep. Next week I'm working 5 12 hour shifts, for a grand total of over 60 hours at work, so part of my job this weekend is to figure out what next week's meals are going to be, but I can guarantee 5 days worth of meals which will be markedly similar to one another. 

About to go take the dog on a walk (we have a set 2.2 mile loop around the neighborhood) because she is a 4 year old lab who has been cooped up while I work back to back shifts, and she has more energy than she knows what to do with right now. 

Then probably trying to stay awake for a few more hours to get myself on a more normal sleeping schedule for my days off. Hopefully not eating anything too crappy while I'm overtired, but it helps that I live alone and have eliminated the junk food from the house, because even if I were to overeat, the worst damage I could do is peanut butter and cheese slices.
