
Alrighty, so I've done a couple DietBets before and did not win. I honestly don't think I even put that much of an effort for a full month. Of course, I'm nervous about starting this one because my determination isn't as high, but losing weight is something I need to do for health reasons and to have more energy, so I'm just going to take it one day at a time.
On Sunday, I made vegetarian caldo with quinoa (instead of rice) because it has more protein, corn, potatoes, cabbage, squash, okra, and Gardein faux chicken. The only reason it's not vegan is because the veggie boullion cubes I used has whey in it. Note to self: read labels before purchasing!
This is my first time making caldo and it actually came out pretty good, if I do say so myself! The plan is to have this for lunch and/or dinner this week to kick off healthy eating. *thumbs up*
