Here's a great recipe for you potato lovers without the potato!  Cheesy Cauliflower Tater Tots!  Great for kids too!

Ingredients:
   1 large head cauliflower
   1/2 cup gluten free bread crumbs (or more if mixture is too sticky)
   1/2 cup shredded pepper jack cheese (or any other flavor you want)
   1/2 cup freshly grated parmesan cheese
   1/2 teaspoon salt
   1 tablespoon dried Italian seasoning
   1/2 teaspoon garlic powder
   1/2 teaspoon onion powder
   1 large egg

Instructions:

 1. preheat oven to 400 degrees and line a baking sheet witparchment paper
2. Remove the florets from the cauliflower and lightly steam in the microwave for about 5 minutes
3. In a food processor add the steamed cauliflower and lightly pulse until it resembles crumbs
4.  In a large bowl add the cauliflower, bread crumbs, cheese, seasonings, and egg. Using your hands mix very well and form the mixture into tater tot shapes
5. Place the tots on the baking sheet and bake for about 20 minutes (turning half way through) or until golden brown
