I was so excited to see the scale 2 lbs lower than when we started this! Loving it!! I've realized that I really like the accountability of this whole DietBet thing. That it's not just me I'm answering too, or that I'm doing it alone. Thanks everyone for being there. And I hope we all are super successful at reaching our goals!
Another fantastic protein rich breakfast! 2 slices of rolled polenta* (qty 2, 1/2" slices is 70 cal) sauteéd in coconut oil*, loaded up on top with 1 egg* scrambled up with 1 TBSP cottage cheese, 1 TBSP pico de gallo*, 1 maple link sausage chopped up, 1-1/2 TBSP guacamole, 1/2 TBSP greek yogurt, and a drizzle of spicy green salsa. O.M.G.
For lunch I'll have a... let me think .... a SMOOTHIE! I think it will be another kale/spinach/avocado wonder.
For dinner it'll be bone-in fat-trimmed pork chops sauteéd in coconut oil* topped with a pile of yellow onions sauteéd in coconut oil* and the whole thing covered in tomato basil soup. Served with mashed cauliflower* (in place of mashed potatoes) and a nice salad*.
Have LOTS of house cleaning and window washing to do today. And yes I count that as some exercise. Reaching, bending, moving furniture around, up and down off the stool.
One thing I really need to get better at is my water intake. Any suggestions??
