I have been craving bread and I really don’t eat much bread since my Dietbet weight loss journey.  The house rules are if we eat out, then ok, if there’s bread then eat it, but don’t bring it home because Louise and David will eat it nonstop until it’s gone! Then my son said he and his wife were coming home for Christmas! I had to create a menu for a GLUTEN FREE handsome young man.

Gluten Free?

I bought a bit of everything Gluten Free, only to find out that OATMEAL is gluten free and super easy to turn into flour in about 30 seconds at home! I made gluten free waffles for sandwhichs to ‘test’ the flavor! BREAD!!!! It was great.

But what to do with that Cocoanut flour????

I found it!  On Pinterest of course – an easy waffle recipe using coconut flour AND BEST THING – Coconut Flour is KETO FLOUR!!!

 

Coconut Flour Cottage Cheese Waffles

 Don’t do it!  These were AWFUL!

 In theory, Coconut flour is the perfect KETO flour. High in fat and fiber  but taste? We the taste is equal to the mess in my waffle maker that I will be cleaning up the rest of the evening!

 I even tried using the ‘batter’ (if you can call it that) with another egg  and frying it in a frying pan pancake style.  Looked ok but taste.. nope nope nope! HORRIBLE!

 I have a few days before Janurary 1st starts and I want to be ready!

 DO YOU HAVE A COCONUT FLOUR – LOW CARB recipe to use up this flour – change my attitude about it – and save my diet?
