Thought I would keep a journal of what I have been eating and share with everyone for pointers or to inspire!

 

Here is what I ate today:

Breakfast:

2 eggs scrambled in 1TBS olive oil with spinach, mushrooms and onion

1 Slice P28 high protein bread

8 oz. unsweetened almond milk

snack:

1/4 cup cottage cheese

1 cup blackberries and raspberries

Lunch

Kale spinach salad with strawberries, blueberries and almond slices 2 tbsp. raspberry vinaigrette

1 salmon filet

snack

Granny smith apple slices

2tbs almond butter

Dinner

Kale and spinach Greek salad

Cucumber and cherry tomato

Feta cheese crumbles

8 Kalamata olives

1/4 cup canned salmon

 

This added up to about 1500 calories.  This is an increase from what I was eating (1200) because of my activity level.  I worked out today on the elliptical for an hour burned about 500 calories.
