We love these roll up pancakes!  They are easy to whip up in the blender and they are lower carb and high protein.  They also warm up really well (I cook up a double batch so we can eat them for a couple of days.)  They are delicious will all kinds of fillings: jam, fruit, vanilla greek yogurt, nutella, a little cool whip...  Lots of options!  Also, I use nonfat cottage cheese in the recipe with great results.
