
I made this for lunch yesterday (and since it made a lot I'll be having it for lunch all week...Stop by if you want a bowl.) and I loved it! Quinoa is so great for you- tons of fiber and protein, add in some chicken and veggies and you are set for a great meal. This salad might not be for everyone- there is a lot going on in there.
