I got a juicer which makes morning veggies easier and use the left over pulp in breads and muffins. It takes effort, so I don't do this everyday, but it's added some variety for me. I also love sautéed veggies in marinara sauce. I add tofu to that a lot, and sometimes whole wheat noodles. I wish I had a crockpot to do what you are doing though.
