Foil Baked salmon

This can be a main dish served with vegetables and a grain, such as brown rice.

 

Ingredients:

Onion, finely chopped

Oil

Low-salt chicken broth

Garlic cloves, minced

Sour cream, low-fat

Whole grain Dijon mustard

Fresh chives, chopped

Fresh tarragon, chopped

Salmon fillets

      

 

 

 

Directions:

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat.

 

  1. Add onion and sauté until onion turns golden, stirring frequently (about 5 minutes).

 

  1. Stir in broth, mustard, and garlic.

 

  1. Boil mixture to blend flavors. Reduce heat and whisk in sour cream. Then, stir in chopped chives and tarragon. Season with salt and pepper.

 

  1. Season salmon fillet with mixture and wrap salmon in foil, cooking in oven at 425F for 15 minutes or until just cooked through.  Internal temperature of fish should be 145F.
