Filling, delicious, vegan, and SUPER low on calories!! This makes 4 servings at 129 calories each.

 

1 tbsp Coconut Oil

1 cup Onion, chopped

3 cloves Garlic, minced

2 tsp Cumin

1 tbsp Garam Masala

1½ tsp fine Sea Salt

4 cups water

1 28oz can of diced Tomatoes, undrained

1 cup Red Lentils

½ Lime juice

¼ cup Cilantro

 

  1. Cook onion in coconut oil over medium heat for 6 to 7 minutes, until onions are soft.
  2. Add garlic, cumin, garam masala, and salt, cook for 1-2 more minutes.
  3. Rinse and drain lentils
  4. Add water, tomatoes, and lentils. Bring to boil.
  5. Turn down heat, to simmer, cover and cook for 20-25 minutes.
  6. Add lime juice and cilantro.
