
Here is my breakfast taco recipe. The serving size is 2, 5-6" tacos. And it is delicious!
I had 1/2 C of 1% milk with my tacos for a total breakfast of 485 calories, 46g protein, 40g fat, and 51g carbs. This has two healthy fats in the avocado (guacamole) and coconut oil. You can eliminate the sausage if desired and that will lower the protein by 5g, fat by 8g, and carbs by 1.5g.
I bought the sausage prior to starting this and wasn't going to throw it out. And when you heat up the tortillas, do them so they are slightly browned in spots on both sides. Then set them in a taco-holder or lay them folded in half on your plate to cool.

Karen's Breakfast Tacos
Serving Size: 2 tacos
INGREDIENTS
2 5-6" corn tortillas
1 large egg*
2 links maple sausage (omit if desired)
2 TBSP pico de gallo* (not salsa. pico is only veggies with no sugar added)
1/2 TBSP coconut oil*
1 TBSP green salsa (as hot or mild as you like)
2 TBSP plain greek yogurt (in place of sour cream)
2 TBSP guacamole (homemade or purchased (made with only veggies and no fillers))
Lime* wedge (for adding to yogurt to sour it up like sour cream and to squeeze on taco if desired)
MAKE IT
Heat up small non-stick ceramic sauté pan on simmer burner on high heat.
Heat up one tortilla at a time for 30 seconds on each side to change texture from rubbery to a normal taco. Set aside on your breakfast plate.
Slice up sausage links into 1/2" pieces and cook thoroughly on low in same pan.
Scramble egg well with pico de gallo.
Mix yogurt with lime juice until you have the sour taste you like, or leave yogurt plain.
Drain off any residual sausage grease into small bowl lined with foil cupcake liner. Discard when solid.
Add coconut oil to pan, it will melt immediately.
Add egg mixture to pan and sausage. Stir to mix well while cooking thoroughly.
Add cooked egg mixture to taco shells, splitting it half and half.
Drizzle on green salsa.
Top with guacamole and yogurt, and a squeeze of lime if desired.
