As some of you may know, I recently (starting the beginning of September) started following the Keto Lifestyle! It involves having more fat and a LOT less carbs. As I’ve gone along this journey, I’ve been looking for new recipes to help spice up what I have to eat every day.

Bread is a hard one. Sandwiches have gone by the wayside, as well as toast and garlic bread. That was until I came across CAULIFLOWER BREAD! 

I was eager to try it and last night attempted to make it. Let’s just say, I’m an instant fan! 

Run, don’t walk, to the store and get some cauliflower to try it out for yourself!!

Ingredients

  • 6 Eggs (separated)
  • 3 Cups “Riced” Cauliflower
  • 1 1/4 Cups Almond Flour
  • 1 Tbsp Baking Powder
  • 1 Tsp Salt
  • 6 Tbsp Butter (melted)
  • 5 Garlic Cloves
  • Parmesan, Thyme And Parsley to taste.

Instructions

  1. Preheat oven to 350 and line loaf tin with parchment paper.
  2. If cauliflower isn’t riced yet, put in blender or food processor and grind up. Add to microwaveable bowl and microwave for 3-4 minutes. Let cool.
  3. Mix egg whites until they make stiff peaks.
  4. Once cauliflower is cool, use cheese cloth or thin kitchen towel to squeeze out extra water.
  5. Mix egg yokes, melted butter, almond flour, baking powder, salt and 1/4 of the egg whites.
  6. Add in cauliflower, garlic and spices.
  7. Mix in remaining egg whites.
  8. Add mixture to loaf tin and bake at 350 for 44-50 minutes until the top is golden brown.
  9. Sprinkle Parmesan on top
