Here is another recipe of something I made this week! I hope you enjoy!

 

This recipe is also vegetarian, vegan, and raw!

 

Romaine lettuce leaves ( whole)

Tomatoes 2 cups chopped

Juice from 1 Lime

Juice from 1 Lemon

1 clove garlic

1 tbsp Apple Cider Vinegar

Bell Peppers ( red, orange and yellow) 1 cup chopped/mixed

1 cup Raw Cashews

1 cup Chopped Raw Walnuts

1 tbsp olive oil

1 tbsp honey

Cumin

cayenne

salt and pepper to taste

1/3 cup Cilantro (fresh)

Avacado --add at end

 

Prepare the Salsa:

Chop Tomatoes, Bell peppers, and Cilantro and place in bowl.

Add lime juice, honey, garlic, honey, and salt and pepper to taste. Mix and chill

 

Prepare the walnut 'meat':

Mix the chopped Raw walnuts in a bowl with Cumin, Cayenne, salt, pepper and olive oil. Shake or stir until well coated. (spice to taste)

 

Prepare Cashew 'sour cream':

Put raw cashews in a blender with Apple Cider vinegar and lemon juice. Add 3 tbsp of water and blend.

add more water if you want a runnier consistancy

 

Put it all together!

 

Wash your romaine and fill each romain cup with the Walnut meat, salsa, and cashew cream. Top with extra cilantro and fresh Avacado and ENJOY!
