This is a recipe for a lower fat egg salad. It's from the Moosewood cookbook, and I think it's delicious. I don't make egg salad any other way. Here is the recipe:

6 eggs, boiled, use all of the whites and ONLY two yolks

1 celery stalk

1/2 red bell pepper

1-2 tbsp minced dill pickle or relish

1/4 c minced red onion

2 tbsp minced fresh dill, or 2 tsp dried dill

2 tbsp reduced fat mayonnaise

2 tsp prepared horseradish

1 tsp dijon mustard

 

I didn't have fresh dill or reduced fat mayo. I used canola mayo and this recipe is around 340 calories without the reduced fat mayo. It makes enough for two big servings if you want it as two lunches or dinners by itself, or a few little servings as a small side to a meal. Try it!
