Here is the lettuce wrap recipe for those who asked (and those who didnt!) :) I love this, it is super easy and feeds about 4 easily. My boyfriend and I always have leftovers for at least another meal for the both of us!

Feel free to adust ingredients to your liking. Sometimes I will add extra garlic and sometimes I wont use water chestnuts. It all depends on what I have. The possibilites with this are endless. 

Filling:

1lb ground chicken/turkey/beef (whatever you prefer)

½ onion, minced

3 green onions, chopped

2 Tablespoons of jarred or 2 garlic cloves, minced

1-2 Tablespoons ground ginger or 1” knob ginger, peeled & minced (I usually use ground. I rarely have fresh ginger on hand and am not buying a whole chunk just for the recipe)

2-½ Tablespoons soy sauce

1 Tablespoon + 1 teaspoon rice vinegar

1 Tablespoon sesame oil

1 Tablespoon peanut butter (crunchy or regular)

½ Tablespoon water

½Tablespoon honey

2 teaspoons Sriracha (adjust to your own taste, I would say this is about medium)

½ 8oz can sliced water chestnuts, drained & chopped

10-12 large outer lettuce leaves, rinsed and patted dry

 

Toppings: (optional) Choose whatever you would like on top!

¼ C peanuts, chopped

¼ C thinly sliced/julienned carrots

¼ C thinly sliced cucumbers

¼ C green onions, finely chopped

Sesame Seeds

Cilantro

 

Sauce: use this as a guide, if you think there is to much of something, feel free to adjust with the other ingredients. 

2 Tablespoons rice vinegar

½ Tablespoon sesame oil

1 Tablespoon honey

3 Tablespoons soy Sauce

a squirt of Sriracha if you would like some heat, feel free to leave it out or just add on top of the lettuce wraps

 

1. Heat a large, non-stick skillet on high. Add meat and onion. Season with salt and pepper. Make sure you break up the meat as it cooks. Cook until no longer pink, then add garlic and ginger. Stir to combine. 

2. Combine soy sauce, rice vinegar, sesame oil, peanut butter, honey, sriracha and water in a microwave safe bowl and microwave for 15-20 seconds. Stir to combine the sauce and add to the skillet.

3. Add green onions and water chestnuts. Cook for 1-2 minutes.

4. While waiting for the last step, combine the sauce ingredients and microwave for 15-20 seconds. Stir to combine and set aside. 

5. Assemble the lettuce wraps, add toppings of your choice, and drizzle sauce over.
