  • Yesterday’s meal prep is today’s simple, warm and delicious breakfast. Crustless broccoli quiche. This is a long-time favorite but I hadn’t made it in awhile and I find myself wondering why because it is so yummy and easy to make. I followed the recipe (linked below) except I add a little diced red bell pepper (it makes it look Christmas-y, don’t ya think?) and I only use half the cheese. I like to pair this with two links of turkey sausage for a hearty breakfast and halving the cheese keeps my calories where I want them for breakfast. The egg/cream mixture from this recipe is what I use when I make any crustless quiche. I like to experiment with different flavor combos. I highly recommend this one!
