  • My breakfast idea for gluten sensitivity...
    Tigernut-banana pancakes! :-)

    They are the first pancakes that worked out at first try for me and are easy to do as well:

    Soak 2 heaped tablespoons of tigernut flour with 2x the amount of hot water, add your preferred spices (I love cinnamon, tumeric, cardamom and a pinch of black pepper an salt) and let sit for 2 minutes. Add 1/2 of a mashed banana and two beaten eggs, and mix well. If the dough is too firm, add some more warm water until right consistency.
    Add tablespoon-full amounts into a pan with heated olive oil and bake on both sides until brown. Spread/layer with the filling of your choice (I like protein-rich curd cheese with sea buckthorn juice and apple slices) and drizzle with a bit of honey or whatever you like.
