Ugh! I was doing so well and then ate a lot more than usual, including carrot cake on Mother's Day. My kids came over and we did a ton of work outside and I know I am retaining water from just over doing it. Even worse, I didn't drink enough water. Anyway, lets just say that when I weighed in this morning I was floored at how much I gained! Not sure I can make this month's goal after this back slide but I am sure going to try. I meal prepped today so that will help some.

Found out recently that the body stores a lot of water with carbs, so eating refined sugar and starches can cause a lot of water weight. This is also why low carb diets cause so much weight loss at the beginning-it’s losing all the water that is stored along with the carbs. In other words, maybe restricting carbs for a bit after a splurge might help bring down the weight on the scale a couple of days later?

Wow! That totally makes sense and I am going to try to limit carbs the next few weeks. I prepped beef and chicken kebabs with peppers, mushrooms and onions and made a greek salad to go with for dinner and am doing tuna salad stuffed avocado halves for lunches this week.
