With Easter on its way, I thought we could do a recipe round up of healthy dishes that you can make so you don't stray off course - at least not too far.

It's no secret that Skinnytaste is one of my #1 websites for healthy recipes. I have never made a bad recipe from her site. And the majority of meals that I prepare on the regular come from Gina's site.

What are you preparing for Easter this year? My family and I are headed out on a camping trip down to the Shenandoah Valley today. So our meal on Sunday will be scaled back quite a bit. So let me live vicariously through your brunch/dinner plans!

I want to spend Easter with Giada! Unfortunately I have been assigned desserts for my family Easter. There will be lots of sinful desserts, but I plan to roast fresh strawberries to have with a dollop of whipped cream.

I made spanakopita and salmon along with a ham, keilbasi, and all the trimmings. Back to my vegetarian plan of fruits, veggies and beans tomorrow!
