I know slow and steady wins the race, but I definitely have trouble staying in the moment, focusing on today, and not throwing in the towel because of how much weight there is to lose--I think I'll make today's goal finding one good vegetarian recipe that I can put in next week's meal plan. We have been rocking eggs and tofu. Tried this the other day! Added lots of roasted veggies (I roasted them while roasting the tofu), increased garlic and ginger. I decreased the soy sauce. It turned out YUMMY! Will marinade the tofu longer next time. Baking the tofu first really helped get out the excess moisture.
