Great question!
I usually mix it up, but for a few days I was blending up my veggies and fruits into a smoothie for lunch. It was a quick and easy way for me to get a lot of them in.

Usually I meal prep using spaghetti squash. One squash typically makes five servings, plus I can change it up each week for different flavors. It also gives me my pasta fix.
