  • Grilled cheese made with Keto bread made with psyllium husk, almond flour, little bit of flaxseed meal, oil, baking powder and egg. Closest thing to wheat bread in a while, but more dense. Holds shape better than regular 90 sec bread.
    Also obligatory plate half full of veggies-sautéed red peppers and onions.

It was a rough week. I took my family to a theme park and traveled the northwest area for 6 days. I did good on sweets but not so good on healthy choices.

  • I really love to cook. When I cook, I generally eat a lot better. But I work as a nurse, working six nights in a row, the last thing I want to do after a 13 hour shift is cook. In the last two years, I've gained over 30 pounds from eating for convenience: fast food on the way to work, grab and go meals at the grocery store, take out, ordering pizza with my coworkers. My boyfriend has been a big inspiration for me wanting to get fit again. He's big into exercising and meal prepping. Since he's moved in, I've been cooking his meals for him and eating them as well. I've lost 24 pounds so far just by eating those meals. After every cooking session on one of my days off, seeing my fridge full of healthy, clean food that's available for me to grab and go makes me feel really happy and relieved. Breakfast, lunches, dinners, and snacks all ready. I don't know why I didn't do this sooner.

It's an ongoing struggle everyday to not give into cravings! Most days I can say I'm proud of myself but I'm having a hard time kickin' these thoughts today. So far so good but it's only 3pm here and I'm scared of what I'll give into when I get home from work. Fingers crossed....

Same here! The office had cupcakes and sandwiches from this amazing deli/bakery today. But I already calculated my calories for the day and I had some to spare. So instead of saying no to the cupcake all together I only had a half a cupcake!

    Go the extra mile today! That's going to be different for everyone. Examples: Do 10 minutes more cardio than you normally do, skip that soda, go to bed 30 minutes earlier, think positive and focus on your progress. Try to think of one thing today you can do to improve your health and GO THE EXTRA MILE!

I'm nervous about my progress weigh in tonight. My fitbit was a little deceiving on how many calories I could take in that day and I think this past week did not end up being a win for me...but I will get on that scale and hope for the best. No matter what I am going to give it my all moving forward!
