  • supper tonight was amazing and i have another pepper for supper tomorrow. the “salad” is quinoa, black beans, olive oil, lemon juice, garlic, cumin, salt and pepper, and has been sitting in my fridge for a couple days.

thanks amber! i cook quinoa in the rice cooker, usually 1 cup quinoa to 2 cups water (which makes 3 cups cooked). this salad has become a staple for me, it’s great eaten cold with fresh vegetables in it too but since it’s cooler weather i wanted my food cooked!and cheese makes everything better lol
