I've realized I've been eating veggies some and not veggies most and also feeling a bit unfocused this week. I'm feeling a bit overwhelmed. Maybe I'm just making this more complicated than it really is? I think I haven't really found some veggie recipes yet that I love.

Carrot and turnip fries were a huge game changer for me! Target sells carrot sticks of precut carrots already in the shape of fries, season them, put them in the oven or air fryer and they’re so tasty. Look forward to those at least a couple times a week, gets me excited about veggies! Finding veggies alternates to “unhealthy” food that I would typically eat vs. coming up with all new veggie based recipes has been helpful for me.
