Going vegetarian for the week to see if I can kickstart some weight loss- I’ve never gone fully veggie before so wish me luck!

One of my favorite meals (and always requested when we had potlucks/events) is a roasted veggie dish. I would roast some potatoes and butternut squash along with onions on one pan (don't substitute the butternut squash it is what makes the dish). And a 2nd pan of veggies- I always use grape tomatoes, peppers, onions then add in whatever - green beans, asparagus, etc. Use parchment paper and a bit of olive oil on the veggies. Do not add salt. Once roasted take out of the oven/off the grill and immediately add minced garlic and feta cheese. The garlic and feta will sear into the veggies. The feta has enough salt that you should not add salt when cooking. It is soooo good. And if you don't add the feta, do salt the veggies when roasting.

Good luck! I personally don’t care for meat. I’ve just always been that way. I often eat around the meat on my plate. I need to cut out starches myself. Let us know how you do!
