  • Chicken stroganoff for dinner! My fav way to sneak tons of greens in. I put so much spinach and it cooks down so small!😂

    Recipe:

    1 thin sliced chicken breast cut up (I use thin sliced)
    1/3 cup low fat cottage cheese
    64 g brown rice pasta
    Onion
    Mushroom
    Spinach
    Salt, pepper, garlic powder

    Sauté all chopped veggies until tender. While veggies are cooking, boil pot of water and add pasta, cook until tender. Dice, season, and cook chicken breast pieces until completely cooked through. Mix chicken and veggies, add drained pasta, then add cottage cheese and combine until cottage cheese is melted. ENJOYYYYY!

    (I use Tyson black pepper chicken now for faster option)

I HATE cottage cheese and mushrooms and I LOVE LOVE LOVE this dish. We will add some chicken or beef bullion to add some extra flavor. But oh man...so good.
