Day 2 of workouts!!

I am homeschooling my preschooler, my 4th grader, and my sophomore is doing remote learning. I don't have a problem getting my workouts in... I have a problem with eating what they eat. I have PCOS and my body doesn't like dairy or gluten. But since I cook for the whole family and they are picky eaters, I end up eating what they eat. The 4 yr old doesn't like the texture of meat, my middle kiddo I make eat what I fix, my daughter is a teen who used to eat good but now wants junk food, and my husband is just as bad as my youngest with veggies. (I love veggies!)
Anyone have any great recipes for gluten and dairy free that the whole family eats?? Or any tips on how to expand the rest of the family's pallet? I'm tired of fixing two meals or limiting what I can cook because of the rest of the household. ( I miss seafood!) :-/

I also have PCOS and have worked hard this last year to cut out gluten & dairy. I find cooking for the whole family works best when it’s a meal that is naturally gluten free. Here are some things that work for us:

Tacos - corn shells & ground turkey meat. I don’t put cheese on mine but the kids do. Load it up with lettuce & tomatoes or salsa. Can also top with a slice of avocado.

Pork roast - I buy a shoulder (cut off extra fat) and throw it in the crock pot. You can turn it into kalua pork (add a little cabbage & serve over rice) or BBQ pulled pork (there’s a great bbq sauce in the first Instant Loss book). Can also use the roast with potatoes & carrots.

Chilli baked potatoes

Rice noodle pasta dishes - (spaghetti with ground turkey meat and Ragu makes a great organic sauce) & (Pacific brand cream of chicken soup is gluten free & dairy free. Put it over the noodles along with shredded chicken, canned chicken or tuna.) I like jovial brand of noodles and my boys can’t even taste the difference from traditional noodles. It’s made from brown rice. You can make your own meatballs using ground turkey and oats in place of bread crumbs.

Stuffed avocados - cut a ripe avocado in half, layer it with quinoa, shredded chicken, shredded lettuce, & drizzle with chipotle or green tomatillo sauce...my boys actually love this, even my son that doesn’t like guacamole likes it.

Thanks Rashell! It all sounds delicious and I will definitely give a lot of those ideas a try! (I can’t do the avocado things, my daughter is allergic.)
As you can tell I’m new to the whole PCOS way of life so it’s all confusing at the moment with a ton of different opinions on what to do. So I’m just going to focus on eating clean and avoiding what I know my body doesn’t like! Seeing you give out all those recipes gives me hope that this will get easier!
