  • Happy Set-up Sunday! This week’s meal prep of 16 meals was approximately $39 and took a little less than 1.5 hours of working time.

    Pot Roast with Grandma’s Scalloped Potatoes: And yes, I have permission to post this recipe lol! In a crockpot add a roast, 1 pack of onion soup mix, and 1/2 cup of water. Cook on low for 6-7 hours. Peel and slice 5-6 medium regular potatoes. In a large, bake-able, and greased dish place a layer of potatoes then sprinkle with salt/pepper/diced onion and a layer of sliced velveeta cheese. Continue to layer until you run out of potatoes. Then add mixture of 1 cup warmed non-fat milk and 4tbsp light melted butter over the top. Then place a thin layer cheese and then butter on top. Bake uncovered for an hour and a half. Then stir up all together.

    Spaghetti with Meat sauce (with hidden veggie!):Cook 14.5oz pasta (I use the yellow box Barille Protein pasta) to your liking. Brown 1 lb of ground beef. While doing so steam 1 bag of cauliflower rice (we like to add veggies that we don’t notice, any chance we can get!). Once meat is browned, add in cauliflower and 2-3 jars of your favorite sauce (we love the Tomato, onion, and garlic). Let sauce simmer for about 5 minutes. Mix with noodles and then top with parmesan.

    Chicken & Gravy with Mashed Potatoes and Green Beans: Combine 1 cream of chicken soup, 2 packets brown gravy mixes, 2 cups water, and pepper to taste into slow cooker and whisk until fully combined. Add 2 lbs of chicken breast. Cover and cook on high for 5-6 hours. I use my kitchen aid to shred the chicken after fully cooked (pro-tip!). Pair with mashed potatoes, rice, or whatever your like!
