  • Quick and Easy Crustless Keto Pizza

    This is one of my "I'm all out of effs and quickly losing the will to live" recipes, because it's easier than putting on shoes and going out to grab fast food and faster than asking Doordash to bring me fast food.

    This isn't the BEST keto pizza.
    There are tons of better recipes with fathead dough crusts, chicken crust, or even low carb tortilla crusts.

    But when you're tired, don't want to cook, and really just want pizza; this will hit the spot.

    1) Grab the rack from your toaster oven, cover with parchment paper, spread a few tablespoons of Rao's marinara on the paper.

    2) Top the marinara with 2-3 cups of mozzarella and 1/4 cup of parmesan.

    3) Season: I used garlic powder, onion powder, oregano, and basil. If you have them and like a little spice, red pepper flakes would be a great addition.

    4) Toppings: feel free to get fancy with it. Tonight I wasn't up for fancy so I just slapped on pepperoni and called it good.

    5) Pop it in the oven at 425° F.

    6) I set the timer for 15 minutes just so I don't burn the house down if I get distracted. It's actually done much sooner.

    7) You want the edges to burn a little and the middle to have a chance to bubble. About 7-9 minutes in the oven should do it.

    8) I slide the parchment paper right onto a cutting board and eat with a fork.
