I wanted to share a new food that is at Trader Joe's. It's called Spicy Mexican-Style Riced Cauliflower. (Picture of package in comments.) All this week, I've had a deconstructed burrito bowl using this riced cauliflower. I also bought some of the Trader Joe's pollo asado, shredded it and use it along with the riced cauliflower. But you can also use this Skinnytaste recipe to make salsa chicken.

I have added romaine, pico de gallo and some Trader Joe's lite Mexican shredded cheese. And it's filling, tasty and low calorie, too!
