We are coming down to the final week of this challenge. How time flies when we are having fun! Right? We're having fun, right??

I am setting myself up for success this coming week by getting food prepped for lunches. I tend to eat the same thing every day for lunch. It's easier for me that way, but after the week is up I'm happy to try something different. This week, I am planning to make spaghetti squash lasagna boats. It's a Skinnytaste recipe. Link here

The recipe calls for using chicken sausage, but I use a 20 oz pack of 99% fat free ground turkey instead. They heat up so nicely, too.

Stephanie - I think Gina also has a recipe on her site where this is more of a casserole type of dish rather than "boats" that are put back into the shell. I like putting it back in the shell, personally. It allows for more portion control!
