Hi friends! How are you rocking the week 2 schedule? I am LOVING my new healthy ‘stir fry’ recipe experiments!! You can make them for one or for a family of any number!! Here’s the basics, and you can substitute any veggies YOU love!! Here is my recipe for 1-
Adjust serving sizes to accommodate more people.

Heat a Medium saucepan over medium heat.
Add 1/2 teaspoon of avocado oil (healthy fat)
Heat up your choice of “90second” lentils/ quinoa/ farro or brown rice in the microwave if you’re short on time. Fire up slices of your lean protein of choice (I use salmon, halibut or chicken). Once cooked, add 1/2 cup lentils and a cup of mushrooms (and or asparagus). Add diced red & yellow peppers and white onion. at the last moment, throw in handfuls of spinach. Add soy sauce to taste, and a TBSP of rice wine vinegar. Garnish with pepper or hot sauce of your choice. Enjoy!

I am relying heavily on “I am Worthy” right now.

I've been completing the I AM Commited meditation every morning. I will keep listening to it every day this year. There is something about consistency and routine that stabilizes me and reminds me of what I have set out to do. I still listen to others when I need to feel encouraged or reminded of another intention. My biggest hurdle is staying committed to my wellness goals, the smallest obstacle and I fall down. I have committed this year to check myself daily and recalibrate my habits when I feel myself getting wobbly.
