Hey everyone! I'm now working 3 jobs, one of which is incredibly active, so I need to eat more but have less time to cook haha.

What recipes do you love that are easy to prep, but still healthy and energizing? Trying to balance cooking with work has been tough recently!

Poke bowls! Rice or lettuce, diced mango/pineapple/avocado/cucumbers/tomatoes, cooked chicken and then make low-fat spicy Mayo.

I get pre-made breaded fish from our local meat center and just pop that in the oven (takes about 15 mins). Then streamed veggies with rice.


Rotisserie chicken! We pick up organic ones at Whole Foods ($10, I think) & the hubby & I get two dinners out of it plus enough left over to make chicken salad for lunch. Just add salad & veggies, rice - whatever is on hand & you are good to go.
