Consider using a brine on your chicken. You can soak in the fridge or freezer way in advance, and use different flavors for the brine. Brined chicken can be baked (it bakes faster brined), grilled or boiled. If you boil, use the bag it was brined in as a billing bag and stick in a pot or sous vide. It's super tender and flavorful, and if you choose the boiling bag, it will reheat nicely at work. It works for fish, veggies and other ingredients, so you can experiment with flavors.

Ramen with a ramen egg. Super easy, super filling. You can buy dry ramen in packs like spaghetti, where it is already bundled in serving sizes. It cooks in 4 minutes, or a little longer if you don't boil it, you soak it in boiling water. Everything can go on ramen, so its a great way to use up left overs. It reheats really well too, just add a spoon or two of liquid or if you want to mKe it like a soup bowl, some low sodium broth. WAY more nutritious than noodle cups, and just as easy.
