Poke 6 slits in 2 whole eggplants; broil one side x 20 minutes, turn over and broil 10 more minutes; let cool & peel skin. Chop or food process eggplant ; combine with 1 grated garlic clove, 1 T lemon juice, 1 t salt, 2 T chopped cilantro, 2 T chopped scallions, 1/2 t cumin, 1/4 c tahini, 2t EVOO. Drizzle with more EVOO to serve. You can use parsley instead of scallions, cilantro & cumin
