  • Ilana’s Eggplant Sandwich Thins (from her book) prepped and ready to cook for tonight’s supper for my family of 10. We’ll make turkey sandwiches out of them with tomatoes, arugula, Swiss cheese and peppers. My kids love this supper. I’ll post pics later of the sandwiches. This is 2 eggplants total.

Mine never seem to cook right! Any tips?

Well, I don't think I have any tips per se, but I will say that mine come out either soggy or too crispy (burned). There are some that are perfect, so it's a mixed bag for me too. I haven't perfected it. But, perhaps a shift of mindset is necessary to enjoy these. If you don't expect them to be exactly like sandwich thins made of bread, then you can enjoy them for what they are. The eggplant sandwich thins have a different texture than sandwich thins made of bread. I think of them as extra veggies to be a supporting top and bottom to the sandwiches (that have veggies in them as well).
