I’ve been doing a little mini salad with all my meals along with a veg to up that veggie intake even more. I just chop red onion, tomato, cucumber and lettuce up and dress with salt pepper lemon juice and olive oil. I was also craving bolognaise the other day but had no spaghetti. Ended up stuffing some poblano peppers with bolognaise and topping with a little cheese. Would highly recommend!
