I have been in an absolute rut for the last 4 months! I have about 10 lbs to lose this month to hit my goal for this challenge 💪I can and will lose this weight because I love to be healthy! That being said.. if anyone has some good meal prep ideas for lunches, please let me know!

Something that I like to do for an easy lunch is buy the microwavable bags of cauliflower rice, and put together a burrito bowl. I use black beans as my fiber filled carb. They keeps me so full! I usually use ground turkey or lean ground beef as my protein, cilantro, lime juice, salsa, cheese or avocado, plain Greek yogurt instead of sour cream, and salsa of course! I even like to use the frozen bags of cauliflower rice to do an Italian version. You can use grilled chicken, ground turkey, really any protein of choice and then I like to put a healthy tomato sauce over it with cheese. I will add extra veggies that will heat up well or cook as they heat like mushrooms or zucchini, spinach. I usually top it with mozzarella cheese.

I eat a salad almost everyday for lunch. It’s a quick easy way to get in a lot veggies and I make it the night before with dressing on the side so it doesn’t get soggy.
