I love making a chickpea "tuna" salad. Even when I ate meat, was never a fan of tuna salad, but can't deny it's convenience for quick lunches! This chickpea version is high in protein and packed with veggies, easy for sandwiches on whole grain bread or simply eat out of a bowl, or on top of salad! Top with avocado is delicious! This usually lasts me for 6 lunches:

2 cans chickpeas, drained & mashed
1/4 cup vegan mayo (or non-vegan light)
3 tsps Dijon mustard
1/4 cup shredded carrot
1/4 cup diced red onion
2 Tbsp dried parsley (or 1/4 cup fresh)
Half red bell pepper diced
Half yellow bell pepper diced
Juice of one lemon
1/4 tsp salt
- all ingredients mixed together, store in fridge

Confession time: Usually before I get on a hard core health kick and work out routine I will carbo load and not really watch what I eat, but not this time! This time I am sticking to my diet and exercise routine BEFORE we start this challenge so that I can really push myself to try harder and be a better version of myself once the challenge starts! Let’s do this!!
