I made sure to bring healthy treats home for the holidays to ensure I didn’t cave into temptations! I allowed myself a small snack but didn’t binge!

Giannella F.

Mon-veggie chilli
Tues-grilled chicken ceaser salad
Wed-egg salad with avacado and spinach
Thurs-veggie omelette with turkey sausage (dinner was not healthy at all- it was harder than I thought it would be)
Fri-sauteed spinache, shrimp, a small piece of steak and a side salad

This was a very busy end of semester week. I kept it simple because I didn’t have too much time.

I walked on the treadmill an hour a day. I used my 64 oz water bottle to keep hydrated. I scheduled unplugged time and read and wrote Christmas cards. I tried a new Brittany recipe a day, I’m trying to rebuild my pantry slowly. I ate mostly vegan this week and love toasted broccoli more than I ever thought possible, I also love Brittany’s strawberry oatmeal. Just in the last couple of weeks my pantry looks really different. I’ve had fun reorganizing it, it feels good to open the pantry door and see the healthy choices I’ve made.

One benefit of covid is missing all the Christmas food. I tried to order Persian food one day to celebrate the end of a demanding semester, and that would have been a serious diet break, but a grub hub fail helped me stay on track . I took my kids to Chick-fil-A and I’m proud to say I thoroughly enjoyed a lite grilled chicken salad, and I was so proud of myself for that.

Without too much effort or creativity this week, I managed to shave another couple pounds off! It seems to be about making lots of little changes over time, and the little changes really add up!

How are we going to spend it? ✨ ✨

I’m working to limit my snacking.. if anything is out I will munch on it!! So keeping things away and having my water bottle near by is saving me

  • What are you having for lunch today? Instant Pot Ginger Turmeric Chicken Stew for lunch today. My chicken breasts were frozen so I just threw everything into my Instant Pot and cooked it under high pressure for 18 minutes with a natural release.

Tasty lunch on this chilly day. ☺

I only ate out once this week! Every morning I had a yellow squash and zucchini hash with an egg. I made kale spaghetti with zucchini and lemon sauce. Eggplant parmesan for two dinners with a side salad. With every meal I made sure to eat veggies and snacked fruits. This is the best I've eaten yet!

Sarah S.

Monday- eggs, turkey chorizo and 2 homemade corn tortillas (from the book) as well as a tropical green smoothie. (from the book)
Tuesday- Organic spring mix salad with pork loin, goat cheese and raspberries with honey Dijon vinaigrette. (From the book)
Wednesday- Chicken Caesar Salad for lunch snd Thai Beef Salad with some modifications (Marion’s Kitchen) for dinner
Thursday- leftover Thai Beef salad
Friday- chicken salad and lots of veggies with honey mustard dressing (From the book)

We find it helpful to freeze meals. Theis week we have had the shepherds pie, turkey burgers, and butternut squash chilli from your cookbooks. We double or triple the recipes and freeze in two serving portions. What we ate this week was made last month. It helps us eat good during really busy weeks.

Brittany W.

I love that idea Giannella! I know we can all relate to those busy weeks!
