Can't seem to get back to the post to put the recipe. Easy. 2cups escarole ( I just use a whole head) rinse and chop, 2 c fresh spinach, 2 zucchini cube it up, an onion at least a cup. 2 14oc cans diced tomato. I like fire roasted. 2 cloves garlic. And a fennel bulb. I slice it up thin then chop. Oh and I threw mushrooms in. Get it all chopped up and i a pot. Add 6-8 cups vegetable broth. Bring to a boil, turn it down add couple tsp salt, pepper, 2 tsp thyme some oregano and basil if ya want. I didnt have oregano or basil this time but it was fine. Simmer a while. Enjoy!
