  • Made salmon for the first time tonight! It was very yummy, filling, and the whole plate is only 350 calories! 😁

Ingredients:
- 5/6oz salmon (I buy the target 3 piece bag of salmon, they're 190 calories a piece)
- 1 cup green beans (I use frozen)
- 1/2 cup corn (I use frozen)
- 3 cups mixed salad greens
- 1 tsp. Extra-virgin olive oil
- desired amount of lemon juice to taste (it says 2 Tbsp but I find that WAY too much and only drizzle a little bit)
- salt and pepper to taste

Instructions:

1. Preheat broiler to high

2. Broil salmon 5-7 min on each side (I did 7)

3. Steam green beans and corn (I dunno how to do this so I put a very small amount of water in a pot, placed them in the pot, and cover to cook on medium-high. If you're using frozen don't use too much water as sooner water de-thaw.)

4. Rinse mixed greens and place them on the plate.

5. Once finished, place the green beans and corn on the plate, and then the salmon.

6. Drizzle olive oil and lemon juice, and then add the desired amount of salt and pepper



Protein options in place of salmon:
* Cooked lentils
* Sliced nitrite free turkey
* Canned wild caught salmon
* Canned beans
* Canned tuna

omg I am 0.1 kg away from Round 2 goal!! I'm soooo proud of myself. This is the most successful weight loss journey I've ever had before. How are you guys doing?? Keep it up! Don't get discouraged yet, we've come so far!

Today's Forecast: 97 degrees, 100% chance of Healthy eating and exercise!
I decided to wake up at 430am and hit the road. 8 mile walk, 8 mile run to hit my monthly distance goals.

Happy Monday #GetAfterIt

Side note: after this weekend's runs/walks, I am in 111 place out of 3351 runner for my 4 month virtual charity race! 335 miles logged in 6 weeks!
