The toppings sound nice, but for the busy Vegan Mom on the go it’s good eating it as is, I like to eat mine strait from a bowl, but have been known to use a soft shell from time to time.

We use quinoa in place of rice, mainly, with stir fry, tacos, lettuce wraps, and in soups!

Ok, let’s do this! I just got back from the grocery store where I bought a ton of veggies, and beans and some things that I’ve never bought before in my life including quinoa! Giving this recipe a try tomorrow.

Wow, I had completely given up on making my goal this month… between having my period, finishing my dissertation, and going on vacation for my 30th birthday, I’ve been completely off the rails. Refocused a bit last week and was shocked to realize I’m within a pound of hitting my goal! Fingers crossed I can manage by Thursday!
