Only serious risk is if you are eating that, and only that, and in large amounts. Remember that there is good (High-density Lipoprotiens; HDL's) and Bad (Low Density Lipoprotiens; LDL's) Cholesterol. While Animal fats do have a High level of LDL's, they have a large amount of the necessary Amino acids that are critical in health in general, as well as some HDL's. If you are concerned, up your raw leafy greens, maintain your nightly polycosanol, (The P in the 4hb PAGG), and maintain solid cardio. You get far more LDL's from fried foods and processed meats, than from natural, fresh meats. When in doubt, the least amount of handling, the best.
