Autumn is soup time and this one is my favourite. So simple but sooooo gooooooood.

 

1 head of cauliflower, broken into florets

2 medium sized onions

3-4 tablespoons olive oil

2 cups water

2 cups vegetable stock

salt & pepper to taste

 

Chop the onions pretty fine and put them in a medium to large saucepan/pot with the olive oil

*sweat* the onions over a lowish heat for about 15 minutes.. (on my stove it's at number 3 out of 10).. this is the most important part of this recipe and what makes the resulting taste and texture so mindblowingly good ;-) .. This means that the onions shouldn't brown.. they don't really fry.. they should just slowly soften and become translucent.. they oughta sweat.. just like we all have been doing that 30 minute bodyblast..

Once they've sweated it out, add the cauliflower.. swish it around a bit.. and add just one cup of water.. then turn up the heat (7) and put the lid on.. Basically you now *steam* the cauliflower for about 10 minutes..

then add the 2nd cup of water and the 2 cups of veggie stock (or enough liquid to cover your cauliflower by about a centimeter.. 1/2 inch? .. reduce heat and remove the lid .. let it simmer or gently boil (5) for another 15-20 minutes

then BLEND or puree the soup (I use one of those little hand-held ones.. what are they called?)

the olive oil/sweated onions make it really silky smooth.. and when you put that first spoonful in your mouth your whole being kind of sinks into the floor with the weight of the YES it feels..
