For my second Sunday in a row I had a yummy baked pancake for breakfast.  You can see flecks of the yam showing through the golden brown "cake".  The blueberries were simply brought to a boil on the stove with a teaspoon of birch xylitol.

This is not a low-cal cake, but it is delicious, nutricious, gluten-free and full of healthy fats and fiber.  I followed it with Spirulina to conform to my vegetable servings

The next 4 days will see NO fats in my meals, so I really enjoyed this today.

The rest of today will be leftover magic.  Leftover Balsamic Pork Tenderloin and Delmonico steak, brussel sprouts, cabbage soup and spinach.  I just need to bake off more yams.

Time to go move my buns.
