so today, after i had my morning coffee(okay it was 2 cups) and my 2 slices of silver hills 16 grain toast with 2 tbs peanut butter with 1 tsp of honey, i decided to pull out my slow cooker. It is something i usually use often but haven't since before the holidays. Today I made beef stew. It is a pretty simple stew.(below is how i cooked it). The only thing is making sure you put on your meal with enough time to let cook. with stew you want it low and slow to break down the meat so it melts in  your mouth.  I apprechiate my slow cooker becuase it helps me on days i honestly dont know what the plan is.. when my son gets out of school we may go out, we may not. so i like to be as prepared as possible. I am still fighting off this cold so i am hoping that a comfort meal will hit the spot. Here is to a healthy wednesday! 

Beef Stew:

I get stew meat from Costco and season it with salt and peper and then lightly coat it in a little bit of flour. like 1 tbs or 2. brown all sides of the meat and put it in the crockpot over 1.5 cups of mini potatoes. then i cut up one onion and 1/2 garlic head. I love me some garlic. and cook until the onion is see-through in the same pan as the meat to keep all the flavors. put that in the crock pot. peel and cut 10 medium size carrots into more bit size pieces and put over top of the meat. then then put the onion on top of the carrot. open one can of cream of tomato soup. put dirrectly on top. and put on low for 8 hours... it is fairly simple and now i dont have to worry bout it until dinner! Plus it feeds my entire family for a few meals. so sometimes we just freeze a portion of it when it is done to have at a later date. enjoy folks!
