Ingredients

- 1/4 cup lightly packed brown sugar

- 1/4 cup white sugar

- 1 1/2 bit sized chunks of apple (peeled & cored)

- 1 1/2 cups all-purpose flour

- 1 3/4 tsp. kosher salt

- 1 tsp. nutmeg (I used apple pie spice)

- 1/3 cup of cold butter (cut into small pieces)

- 1 egg

- 1/4 cup of milk

 

Coating:

- 1/4 cup melted butter

- 1/3 cup sugar

- 1 tsp cinnamon

 

Preheat your oven to 350.  Whish flour, baking powder, sugars and nutmeg (apple pie spice) in a bowl.  Add the cold, chopped butter.  Rub the pieces of butter with the flour mixture until the mixture resembles coarse crumbs.

In a separate bowl, beat the egg.  Mix in the milk & fold in the chopped apples.  Add the egg mixture to the flour mixture.  Stir using a spatula, making sure not to overmix.  Place a spoonful of batter into each mold of a buttered (sprayed) mini muffin pan.

Bake for 15-18 minutes or until they are just golden.  Remove from the oven, unmold & lightly brush each with melted butter.  Roll in cinnamon sugar blend.  Shake off excess & ENJOY!

 

Things I learned - A tiny bit less salt.  Next time I will try grating the apples - might make the batter blend a little better.

I have not substituted any ingredients yet (like stevia, whole wheat flour, etc.)  I made just as the recipe dictated.  They are delicious!  I will likely try healthier modifications in the future.  But they are baked and portion controlled, and OH SO GOOD!  Perfect for fall!!!!
