Thought I’d share this recipe with everyone, since it’s one of my favorite breakfast recipes.  I either eat this or boiled eggs most mornings, except for my weekend omelet out with my husband.

I got the initial recipe from a website somewhere, but I’ve adapted it slightly.  I’d provide a link if I could remember where it came from, but even after searching I can’t find the variation that I use.  I make this up on the weekend and then put it in separate containers for the week.

 

Sweet Potato and Sausage Breakfast Scramble

Ingredients:

2 large sweet potato’s

1 roll breakfast sausage (I use Farmville Sausage Roll – the only ingredient listed on the package is pork)

1 green pepper, chopped

1 jalapeno pepper, finely chopped

1 medium onion, chopped

Garlic Powder or fresh garlic (either work, but fresh is better)

Italian Seasoning (I just poor some in)

Spinach (I usually use half a bag)

 

Peel and cut the sweet potato into ½” cubes.  Place in a pan of boiling water, and cook until soft.  Drain the water out of the pan, and set potato’s aside.

Cook the breakfast sausage in a saucepan, chopping up into smaller chunks.  When cooked, place onto a paper towel (to soak up additional grease), and set aside.

If your sausage created a lot of leftover grease, poor some of it out.  You will use whatever is in the pan to cook the vegetables.  Cook the green pepper, jalapeno pepper and onion, garlic and Italian season until done how you want (some like harder vegetables).  Add in the spinach.  You will have to fold in the spinach until it gets soft.

 When the sweet potato’s, sausage, and vegetables are done, mix it all together for a healthy but filling scramble
